Just a Little Craving, Chocolate Pound Cake

Why do we crave chocolate? We crave chocolate because it tastes good. It smells good. It feels good when it gets all melty on our tongue. And all of those feelings, are the result of our brain releasing chemicals in response to each chocolate sensation. The experience of eating chocolate results in feel good neurotransmitters or the release of dopamine.

Dopamine is released when you experience anything that you enjoy. This ability of the brain is what makes each of us in a class by ourselves.

In fact, there are supposedly people in the world who do not like chocolate, I only know one personally. You know who you are.

Chocolate Pound Cake
From the Chef in Training

1 1/2 cups butter, softened
3 cups sugar
1 1/2 teaspoons vanilla paste
5 eggs, room temperature
1 cup buttermilk
2 1/4 cups flour, all purpose
1/2 cup cocoa powder
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup chocolate chips

Chocolate Frosting
2 cups powdered sugar
4 teaspoons cocoa powder, sifted
2 Tablespoons melted butter
1/4-1/3 cups evaporated milk

Preheat oven to 350 degrees F.
In the a stand mixer cream together butter, sugar and vanilla paste. Add eggs and beat until well combined.
In a separate bowl sift flour, cocoa powder, baking powder, and salt together.
Alternating buttermilk and flour, incorporate the two into the butter mixture.
Pour into 3 greased and floured loaf pans.
Bake for 45-50 minutes until done.

Directions for frosting
Combine sifted powdered sugar and cocoa powder together in mixing bowl. Add butter and gradually add evaporated milk until you have a smooth spreadable consistency.


I knew there was a reason I liked chocolate !  That and licking the spoon!
